Soft Cinnamon Cookies with Maple Pecan Frosting

Ultra-soft and chewy cookies with browned butter and lots of cinnamon. And because I love you, Maple Pecan Buttercream Frosting to top them off. Because everything is better with frosting.

So what are you guys getting the men in your life for Christmas this year? I’m hounding everyone I know. Why are man-gifts so hard? When Eric’s mom asked him for a wish list he gave her this:

1. Dad’s old baseball mitt
2. Electronics

Like, seriously? I’m supposed to walk into Best Buy and be like, “The Electronics. Yeah, I want all of them.”

I need help guys. Although I suppose advice would be pointless because Eric reads every word of my blog. Any suggestions you make are going to be read. You’re going to have to speak in code. Can you PLEASE stop being so supportive Eric? I’m trying to con people into being thoughtful for me.

He also told me that he was thinking of asking for a Nintendo, and I said sure as long as you buy your own vampire coffin to go with it.

Here’s Truman trying to hide his gaming addiction. Do they make child-size vampire coffins?

Well even if I don’t buy any presents for my husband at least I’ve got cookie plates for the neighbors COVERED this year. Buried Reese’s Cookies, Nutella-Stuffed Gingerbread Cookies, Candy Lasses, Buried Cherry Cookies, Butter Pecans, to name a few.

I’ve got one more for you today and it’s a DOOZIE guys. In a good way. Super soft, browned butter cookies full of cinnamon, topped with this Maple Pecan Frosting I posted a while back. It’s a match made in heaven my friends.

The cookies are adapted from my favorite Chocolate Chip Cookies, which are actually not my favorite anymore. Man talk about false advertising. They were my favorite back before I knew about browned butter. Can you blame me? Here’s the new fav: Brown Butter Chocolate Chip Cookies. (By the way, that original recipe is still killer.)

The other thing that makes these cinnamon cookies super flavorful is the two full tablespoons of Rodelle Pure Vanilla Extract I put in them. Vanilla is just the best thing ever right? These cookies are Day 3 for Rodelle’s 10 Days of Cookies. Click the image below to get the recipes from fellow bloggers as they are published this week! So fun.10_day_cookies_600x900

Soft Cinnamon Cookies with Maple Pecan Frosting

Yield: Makes 28-30 large cookies

Recipe by The Food Charlatan

  1. Start by browning the butter. Melt 3 sticks of butter over medium heat in a saucepan. The wider the bottom of the pot, the faster your butter will brown.
  2. Meanwhile, add sugar and brown sugar to a large mixing bowl or stand mixer.
  3. Back to the butter. Keep the heat on medium and stir occasionally once the butter has melted. Continue to cook until a foam has formed on top. Keep stirring every now and then so that you can see the color of the liquid. Pretty soon the butter will turn from amber to brown. Not just kind of dark yellow, BROWN, with little browned "bits" or "flecks of holy goodness," as I like to call them.
  4. Once your butter is brown and smells nutty, remove from heat and immediately add to the bowl with the sugar. Your butter might burn if you don't do it right away.
  5. Beat the butter and sugar together. Let cool for a few minutes before you add the eggs. Or, live on the edge like me, and add the eggs while your mixer is on so that they are beat in right away and don't have time to curdle.
  6. Add 2 tablespoons Rodelle Pure Vanilla Extract and mix it in.
  7. Add 2 cups of flour to the top of the mixture, but don't stir. Add the baking soda, salt, and cinnamon to the top of the flour and gently stir it into the flour using a teaspoon. Then turn the beaters on low and start to mix in the flour. Add the remaining 2 and 3/4 cup flour and gently stir it in until just combined. Scrape the bottom and sides and make sure all the flour is incorporated.
  8. Chill the dough for at least an hour, or up to 4 days.*
  9. Preheat oven to 350 degrees F. Use a large cookie scoop to shape the dough into large balls, about the size of a golf ball. Place on cookie sheets lined with a silpat or parchment paper.
  10. Bake at 350 for about 12-15 minutes, or until lightly brown on the outside, and still barely shiny in the center.
  11. Let cool on the pan for 2 minutes, then transfer to a cooling rack. Let cool completely.
  12. Frost with Maple Pecan Frosting.

If you are in a hurry (I'm always in a hurry when cookies are concerned) shape the dough balls onto a baking sheet or ziplock and freeze them for 30 minutes, then bake as directed.

I’m sadly getting my husband a gift card this year . . we’ll be in Dallas for christmas and this was our way of being smart (so we wouldn’t have to lug back presents back home and in our suitcases). But last year I got him an awesome heated jacket thing from Sharper Image. . I think they have an awesome selection of cool gifts for guys? Maybe check them out? And yes to these cookies. . yes frosting makes everything better. . and love this giveaway, I would bake cookies if I won! :)

Instead of giving each other presents this year, Brian and I are going away for an overnight trip together…you know, without kids, so…24 hours of eating at grownup restaurants, our own hot tub, and staying in bed. What more could a man want??
Also every time you say “doozie” I hear Ned from Groundhog’s Day.

  3. Diane M. says

We don’t do presents anymore, we do stockings and Love it!
Oh and these cookies sound Wonderful!!!!!!!!! Would be great with
a nice cup of Hot Coffee.

  4. Kellie says

Browned butter is amazing! I’m pretty sure whether I win the raffle or not, I’ll be making these. I do have one question- how far apart should I space the golf ball sized dough balls on my cookie sheet? Ok maybe one more question- are you in need of any taste testers for all of these cookies you’re posting?? ;)

  5. says

Oh Karen… you had me at soft cinnamon! Beautiful and mouthwatering recipe! And you’ve tacked on a fabulous Rodelle giveaway! What excellent timing! So excited to put these cookies on my list to make!

BTW – I think Eric could use a pedicure. Seriously. All men need this whether they know it or not! Find the most posh spa around, and make a surprise appointment. He’ll need to be reassured that other men do this, and the aesthetician can vouch for this (just tell them to bring it while the pedi is in process). What’s even more fun is to do this together with champagne in hand. A lovely experience! Trust me on this!

Yes, Karen your husband and son have serious issues. Luckily they have you to keep them in line! Your photos are beautiful and make everything you make look so tempting. I wish I had the time and the waistline to bake all of your goodies. Life is just too short!

Men are so tricky to shop for! I just had a similar conversation with Shawn’s mom. My idea for her was some good “over ear” noise cancelling headphones, for when he’s editing at the computer. Poor guy is just wearing is apple headphones right now. Hopefully he will like them. Maybe Eric would like a pair too! These cookies look just about perfect!

Okay so this may be way too much information but my husband and I do naughty stockings for each other every year. I figure guys always like that. My husband is impossible. Like impossible. I always try to find a concert or sport game for tickets but no luck this year. He plays the uke so I’m getting him accessories this year. You’re nice. I won’t let my husband read a word of my blog. I know that’s weird but it makes me feel shy. I’m crazy.

  9. says

Uggh… TELL me about it! I have no idea what to get for my guy, and it’s not like he needs anything right now. He bought himself a PS4 last week and has been playing it nonstop. As in he goes to bed when I wake up. And that’s our new routine. So please avoid the Nintendo! ;) But… These cookies would make everything better. Literally everything!

My boyfriend is so tech obsessed that I don’t even bother trying to buy him tech because he already buys himself what he wants. I am getting him some tech books though! If your guy likes to read try Innovators, How Google Works, or Hatching Twitter. Oh or one of those Oculus Rift glasses things- my bf thinks it’s the coolest thing. And I would totally make these cookies if I won the giveaway!!

I’ve been wanting to make the brown butter salted caramel cookies again. Ooh and chocolate buttercream truffles with that cocoa.

  14. Calie says

I would make some spiced cupcakes…came up with this when I was making pumpkin cupcakes and tasted the batter after I added the spices and before I added the pumpkin. They go so well with vanilla frosting.

  15. Brittany Owens says

I have yet to experiment with btown butter anything…so I think I’ll need to whip up some brown butter butterscotch cookies asap!

  16. says

I mean, we are sorta neighbors right? I’ll be home anytime after 5 today if you just wanna drop of a plate of these bad boys. And any other treats you have lying around the house. I don’t discriminate when it comes to browned butter or chocolate. Or anything I guess if we are being honest.

I love that he put “electronics” on a list. Like yeah, OK. Here’s a remote control that I found in the electronics section at target. I hope it works!

Thank god my husband is a little shopper. I literally get an Amazon wish list sent to my email in October. Around November, the photo texts start rolling in with the item and tag number, I KID YOU NOT. Let me know when you find vampire coffins, because clearly I need one as well. :)
