Last week I was complaining to Eric because I hurt my back doing yoga. (I know. I’m like 28 going on 75. Pathetic.) I’ve never really hurt my back before, so I had a lot of complaining-ground to cover. “Eric, I can’t sit.” “Eric, I can’t stand.” “Eric, it really hurts, why does it hurt so bad??”

Then I apologized for being a big fat whiner, and he said, “You’re not fat.”

Although really I should have done better. Eric and I saw these short comics about saying what you really mean several weeks ago and we are trying to implement them. (And when I say we, I mostly mean me.)

I say sorry all the time when what I really mean is, “make me feel better by telling me it’s okay.” It’s a terrible habit. Here’s to saying “Thanks for listening!” more often. Do you guys say sorry too much? Am I the only one?

So who’s watching the Super Bowl this weekend? Need food ideas? This is the easiest dip ever and extremely dangerous because I can throw down an entire batch single handedly. Okay maybe not the whole batch, but I have some pretty close. I don’t think I ever really appreciated cottage cheese before discovering this dip.

Snowy Chili Cheese Dip from The Food CharlatanOne of the best parts about it (besides how EASY it is) is that it’s so adaptable. Don’t have tomatoes? Throw in more salsa. Don’t have cilantro (or don’t like it?) Leave it out. This dip can be as simple or as elaborate as you want it to be. You can even use regular tortilla chips if you want, but personally I think Fritos are best. They just have the best corny flavor!

For Christmas this year we decided that instead of making a huge meal we would munch on a ton of appetizers all day. (We always do a big Swedish Christmas eve anyway. It was nice because we got to spend Christmas day hanging out instead of peeling more potatoes. I’m a fan.)

My sister-in-law Britta made this dip as her contribution. You know how there’s always that ONE dish that disappears before everything else? This one beat all the other appetizers that night. There was only a tiny bit left at the end of the night. The next day Eric and his dad and I huddled in a corner and scarfed it while no one was looking. We got in trouble for not sharing…oops. So I made another big double batch. It’s THAT kind of recipe.

January is so last season, guys! It’s time to eat our weight in cheesy dip!

Snowy Chili Cheese Dip

This Snowy Chili Dip is such an easy appetizer! Stir together some cottage cheese, salsa, avocado, green chilies, and scoop it up with some Fritos.


  • 1 pound container of cottage cheese, any fat content you like
  • 1 4-oz can diced green chiles, or 7 ounce can, slightly drained
  • 1 large tomato, chopped
  • 1/4 to 1/2 cup salsa
  • 1-2 avocados, chopped
  • 1 teaspoon salt, or more to taste
  • 1/2 teaspoon chili powder
  • 1 dash cayenne pepper


  • 1/4 to 1/2 cup cilantro, chopped
  • sliced or chopped jalapenos
  • green onions, chopped
  • fresh lime juice
  • 1 to 2 9-oz. package Fritos, (the scoop kind)


  • In a medium mixing bowl, combine cottage cheese, green chilies, chopped tomato, salsa, avocado, salt, chili powder, and a dash of cayenne pepper. (You can drain the green chilies all the way if you want. I usually just open the can and use the lid to strain out the liquid right at the top.)
  • Stir in the cilantro, jalapenos, green onions, and a few squeezes of fresh lime juice. These are all optional ingredients.
  • Serve in a bowl with Frito scoops for dipping!
  • Refrigerate leftovers.


Fritos come in pretty small bags, like 9 ounces. Depending on how heavy of a dipper you are, you may need 2 bags.

Karen,I love your recipes and I’m intrigued by this one.  The texture of cottage cheese seems odd to me, but I can see why the flavor would work.  Do you think it would ruin he dip if I used my immersion blender for just a few seconds to smooth the cottage cheese before putting it together?  Or does the recipe need the texture of the cc?  Thanks for your great recipes and fun personality.  

    1. Hi Elizabeth! HMM I’m not sure about this! I’m thinking it might make the dip too liquidy? I’m not really sure! I love the texture of cottage cheese and feel like it does add to the interest of this dip. Let me know how it goes if you try it out!

  2. Haha.. I say sorry too much too. But then again, that is the stereotypical Canadian, eh? One of my friends went to Denmark and said “people there seem so rude. When I walked into them, they didn’t say sorry!” Which is ridiculous how we seem to expect both parties to say sorry :p

  3. I’ll make you feel less old. I had a cold/flu last week and coughed so hard that my back has been out for almost another week!
    I say sorry all the time but only for little things like if I bumped into you, or even a table on occasion. But if it’s something big, I have way too much pride. I’m sort of a jerk. Anyway wish we were down there for super bowl this year, we will be all alone so no real excuse to make a bunch of fun foods. :/

  7. Don’t feel bad that you hurt your back doing yoga. I hurt my knee going into a pose that I probably should have eased into a little bit first. Oops!
    I love cottage cheese based dips. My mom used to always make one when I was a kid. This looks so unique and tempting!

    1. No, knee injuries are the worst! Is it feeling better now?

      I hardly ever eat cottage cheese, in anything. I don’t know why! It’s so good! What is your mom’s recipe Amanda? Is it on your blog?

      1. My knee is feeling a lot better, but every once in a while if I overdo it I can tell. My doctor told me I just have to be easy on it. Apparently my right leg has more of a curve than normal, which I guess can make you prone to knee pain.
        My mom’s recipe isn’t in my blog. It should be. It’s so ridiculously easy! You know that French onion dip at grocery stores? She always used spices from her pantry to mimic that flavor, but she used cottage cheese as the base. I remember dunking chips in it and having it alongside BLTs when I was a kid. 🙂
