What do you do when you can’t fall asleep at night? Do you stay in bed? Read a book? Get up and do the dishes? Count sheep?

I’m one of those lucky people. I rarely have problems falling asleep. But last night at 3am I was awoken by a contraction and my muddled brain was CONVINCED I was going into labor. (one measly contraction people. ONE.) I could not shut my brain off. I decided October 27 was a great day to have a birthday. (ONE CONTRACTION.)

Eventually I decided I needed something to lull me to sleep and I picked Numbers. Numbers, like, Old Testament style. Did you know you can listen to the scriptures on the LDS Library app? Even if you’re not Mormon you should check it out, it’s pretty nice to be able to listen to the Bible (King James version) whenever you want. It’s free.

It did work eventually, but it took me 18 chapters, drifting in and out. I still don’t have a baby, by the way, in case you were wondering.

Last year we visited Eric’s Aunt Linda, who is a fabulous cook. (She’s my legendary mother-in-law‘s sister, so I think it’s in their blood.) She made us these roasted potatoes and onions and I think I was that awkward house guest who’s still eating dinner’s side dish with my fingers during dessert time. (Sorry I’m such a gross guest, Linda.)

I begged the recipe off her, and she told me how she made it: tiny potatoes, oil, and a Lipton onion soup mix. Genius!! It is so good. The dehydrated onions get all crisp and crunchy. It is the perfect (easy!) side dish for Thanksgiving this year!

3 Ingredient Roasted Potatoes with Crunchy Onions

These tender roasted potatoes and onions are done SO fast, because instead of adding a whole bunch of spices to make them delicious, you just dump on some onion soup mix and throw it in the oven. The dehydrated onions get all crunchy and glorious! Perfect side dish for Thanksgiving! 

Ingredients

  • 2 pounds baby red potatoes, *
  • 1/3 cup olive oil
  • 1 (1 ounce) package onion soup mix , dry

Instructions

  • Preheat your oven to 400 degrees F.
  • Slice the potatoes in half or quarters. Just make sure they are all about the same size.
  • Add the potatoes to a medium bowl.
  • Add the oil and soup mix and stir.
  • Line a large baking sheet with aluminum foil and spray with nonstick spray.**
  • Roast in the preheated oven for 20-25 minutes, turning the potatoes halfway through. Take them out when they are fork tender.
  • Serve hot!

Notes

*Or you could use fingerling potatoes, Yukon gold, or any potato with a tender skin.
**Or use a bit of the oil from the bowl to grease the pan. You would think that with the oil coating the potatoes you wouldn't need to grease the pan, right?? I swear ever time I don't though, my potatoes stick. Maybe I'm crazy.

  3. I used this recipe many, many years ago, when I was attempting to roast new potatoes for the first time. These are still my go to for company and when the kids are home. Everyone loves them!  Also, I use the soup mix when I do a chuck roast in the crockpot. Just sprinkle the soup mix on the roast and cook on low for 8 hrs.     My other go-to convenience item is consommé soup. My family’s favorite is consommé rice – chopped onion sautéed in butter, rice & 2 cans of consommé, covered & baked for an hour. AND, like you, I LOVE Better than Bouillon in every flavor. These items are all inexpensive- and provide so much flavor!  Thank you so much for your blog – mouth watering recipes and always a funny story!  I look up a lot of recipes on line – and usually scroll through the pics & story as fast as possible – but not when I visit your site. I sit back & enjoy!!

I love when people actually read my blog :) And yes, I use onion soup mix for pot roast too, the flavor is unbeatable! I am super excited about trying this rice dish. It sounds amazing. My mother in law just gave me a recipe for foil packet dinners that I want to post soon (as soon as I can figure out how to make them look appetizing. foil packet dinners are ugly!!) you put some cooked rice, strips of steak, and onion soup mix in foil, and top with evaporated milk. It’s sooo delicious. onions soup mixes are like magic!!

All my problems are in the first trimester, after that I can’t complain. (except that I wrote a blog post complaining about it so…….oops.) haha!

    1. 10 pounds!! Oh man. I was 10 and 1/2 pounds when I was born and it wasn’t until I had my first baby (a measly 7 lbs) that I truly appreciated how horrible that must have been for my dear old mom. Let’s hope I have my baby before she gets too huge!

    1. I love how we talk about “shutting our brain off” like it’s a switch or something. I said the same thing up there. Wouldn’t it be awesome if there were really a switch?? Like C3P-0 style.

  11. oh and YES, the potatoes do stick! it doesn’t make any sense, but it happens. i foil the casserole and…if i remember, i spray it with pam. but sometimes i don’t. (okay a lot of times.) it still comes out so good though.

  12. my dad has been making a dish like this for awhile, and when i moved out he gave me the recipe. i do half potatoes and half butternut squash, and a couple of bone in skin on chicken breasts. mix it all with the oil and soup mix and put the veg on the bottom and the chicken on top. dinner in one dish! so good when it gets cold out :)

    also, i’m always jealous of how fast my partner falls asleep. he’ll be like “i need to take a nap” and in literally two seconds he’s fast asleep. i watch him do it because i’m so fascinated, lol. me on the other hand…while i can’t stay awake through a movie to save my life anymore (why?!), actually trying to go to sleep takes time. we always put on an episode of star trek (any variety) first. if i wake up and really can’t get back to sleep though after trying for a bit, i get on my phone and play one of my word games. (i turn the brightness all the way down and i have a nightshift light set up so the little light that does emit is yellow instead of blue.) 7 little words or red herring usually. there’s no timer, no points, no social aspect so it’s totally stress free. helps my brain focus on something mundane so i can get back into rest mode :)

    1. She IS holding out on you Kris! She fed us these when we were on our way to your house last Christmas, alongside another chicken dish that was AMAZING but I can’t remember what it was now. I need to track that recipe down too! So many things to make, so little time!
