This fresh Mango Salsa is not messing around! It's a recipe for purists. No tomato, no bell peppers, no funny business. We are focusing on the sweetness of the mango itself, plus a few supporting ingredients that bring spice and flavor: lime zest and juice (super important!), jalapeño, cilantro, and red onion. It's so simple. I eat it by the bowlful!
Zest 1 lime into a medium bowl until you have 2 teaspoons lime zest. If you can't get 2 teaspoons, start zesting a second lime until you get there.
Cut the lime in half and juice the limes until you have 3 tablespoons lime juice. Add it to the bowl.
Add 1 tablespoon honey, 1/4 teaspoon kosher salt, 1/4 teaspoon cumin, and 1 pinch black pepper to taste (optional).
Prepare the jalapenosCut or scrape out the membranes and seeds from one jalapeno. Cut each half into thin slices, the cut the slices crosswise into small pieces (see the how-to for pictures).
Prepare the onion. Cut 1/4 of a red onion into very small pieces to make sure the salsa is uniform in size. See this How to Cut an Onion post for extra help on cutting onions!
Add the chopped jalapeno and onion to the bowl.
Prepare the mangoes. Cut 3 mangoes lengthwise as close to the pit on either side. Use a knife to cut a grid into the mango halves (NOT through the peel), then use a spoon to or knife to scoop out the cut mango pieces into the bowl.
Chop 1/2 cup cilantro and add to the bowl. Stir well. Taste it, and adjust any seasonings if needed.
Store in a sealed container in the refrigerator for no more than 3-4 days. Don't freeze it! It will just get mushy. It's time to eat mango salsa for every meal til it's gone! Come on, commit.
