“Karen, do you see this tiny piece? It has SEVEN PERFORATIONS on it. Seven!”

Eric is making a tiny R2-D2 model right now. And by “right now” I mean “the last year and a half.” I know, because a year and a half ago he stole one of my tupperwares to store all the pieces in. Every time I go to put away leftovers and there is no tupperware I shake my fist at R2.

I should add that this happens on an almost-daily basis. It doesn’t matter how often I buy tupperware, there is never enough. You know how some houses have sock-elves who steal one sock from every load of laundry? Well I have tupperware elves. They are merciless.

But back to R2D2. After he finished the model Eric pulled out a little stand for it that SPINS using SOLAR PANELS. That’s right my friends, I now have a miniature solar-powered rotating droid in my house.

I asked Eric where we were going to put it and he glanced at our piano, which is sadly devoid of Christmas decorations as of yesterday. We’ve been trying to figure out what to decorate it with, it seems so empty after taking down the holly and nativity set. What do you guys put on your piano/mantel? Oh, you have a mini rotating R2-D2 model? WE ARE SO TRENDY!!

So the other day my brother Nate brought over some vegetable curry he had made and it was DELICIOUS. I asked him what his recipe was and he said, “Vegetables, curry sauce, and coconut milk.” Easy enough.

How to make easy Vegetable Curry

I feel kind of silly posting such an obvious recipe (buy a jar, dump it in a pot) but I figure everyone could use fresh ideas, and anything I make this much means I should add it to the blog. The recipe only has 6 main ingredients which makes it pretty quick. Use any kind of Indian sauce that you like; your grocery store should have some. Check in the Asian aisle or by the pasta sauce.

Prepping your cauliflower to make a low-carb side of cauliflower rice is easy. Cut your cauliflower in half, then half it again. Then use a knife to separate the core from the florets. Break or chop the florets into similar size pieces so they cook evenly.

  1. This looks similar to a wonderful curry vegetable dish I had in London at a very nice Indian restsurant.. It fits perfectly into our new year plan of Vegetarian dinner once a week. Remember Meatless Monday’s? Thanks.

  2. Oh my goodness, this was SO good!

I made a few changes since I wasn’t going to serve it with rice. Since I wanted it to still be filling, and I wanted plenty of leftovers for lunch tomorrow and to freeze for later, I added two big chicken breasts cut bite-sized at the same time as the onion. I also added a bunch of extra spices (curry, garam masala, cumin, turmeric, and hot pepper flakes) because we like SPICY food and I think some of my veggie quantities were a little higher than what you called for. This is definitely going into the regular rotation. I think it might also work out well in the crock pot for maybe 4-5 hours on low…?

That jar of sauce is killer! It’s seriously so good. Great ingredients, too – coconut milk, lentils, spices, etc – not a bunch of chemicals and preservatives. I never would’ve tried it if not for this recipe!

    1. Ooh I should totally try this in the crock pot Julie! Good idea! I’m so glad you like the recipe. That sauce is legit right?? :) Thanks for coming back to comment!

  3. This looks wonderful!! Easy one pot meals are what I need right now. Thanks for sharing, can’t wait to try!

  4. Don’t feel silly for posting recipes like this! I’m the type of person who needs a recipe, and instructions even if all it is is dumping it in a pot. Lol!

  5. What a delicious and easy meal. I’m sure I’ll be trying it soon! – At least you know where your Tupperware containers go – mine just magically disappear!

  6. Damn you R2! I love it. Oh by the way, I have a wampa cake in production. I can’t wait for you guys to see it :)

    1. Hey Mindy! The sauce all by itself is on the spicy end for sure, and I like spicy food. In this recipe though, since it’s mixed just about 1:1 with coconut milk, it’s pretty mild. You can totally adjust the amount of coconut milk you use too. Enjoy!

  7. But really though, where does all the tupperware go? I swear, I always have an excess of lids, but never enough bottoms. It’s weird. Buuut this vegetable curry looks amazing! Love one pot meals! Pinned

  8. Hahaha – instead of a rotating R2D2, we have a build-it-yourself wind-up alien on our mantle.

I love curry, and I especially love that this only takes 6 ingredients! I need more recipes like this in my life. <3 <3

    1. Oh my gosh! I need to get a wind up alien to go on the other side of my piano. Where did you get it??

  9. A few years ago Shawn got one of those “boats in a bottle” kits. Oh my gosh, little pieces of stuff EVERYWHERE! Annnd it never got done. Haha! So good for Eric for actually finishing the R2-D2! I’ve always wondered if those bottled curry sauces are any good. This will make curry making even easier!

    1. I know, I’m actually really impressed that he finished it after a year and a half of neglecting it! There’s still hope for Shawn, ships in bottle are so cool! :)

  10. I had to check it out when your titled included curry. Sometimes, it is so totally worth it to buy the jar sauces to have a quick and flavorful meal.

    1. I agree Peter! I usually am not a jarred sauce kind of girl, but whenever I use them I’m always like, why don’t I do this more often??

  11. I wish the tuperware elves would come to my house! I have the opposite problem. Every time I open the cabinet, tuperware falls on my head because I have so much jammed in. Not cool! These curry looks delicious – perfect for a cozy winter dinner!
