Mandarin Orange Ambrosia Salad

Ambrosia Salad is an Easter classic! I doubled up the mandarin oranges because there are never enough, right? This dreamy creamy fruit salad is kind of hard to stop eating.

Today Charlotte was taking a survey of everyone in the house. Not to brag or anything, but Charlotte just turned 6 and can read and write with ridiculous proficiency. (Okay so that’s totally bragging, sorrynotsorry.)

She asked Dieter, a friend who was over playing, (he’s 4) whether he would like to A) Visit 100 years in the past or B) Visit 100 years in the future?

Dieter: Past

Charlotte: But Dieter. The future hasn’t happened yet!

Dieter: I want past.

Charlotte: But the past already happened. The future is what WILL happen. In the future!

Dieter: So wait, what happened in the future?

I’ve never seen Charlotte be so adorably exasperated. So what would you pick?? Past or future? Eric pointed out that if you went back 100 years ago to 1917 you might catch the Spanish Influenza. No thanks. What if technology moves forward as fast as it did in the last 100 years? FLYING CARS?? I feel like my imagination is being pretty dull here. A CLOTHES-FOLDING MACHINE? Now we’re talkin.

In the future I bet they will still have Ambrosia. This recipe will last through the ages if you ask me. Did you grow up eating this salad at Easter? I didn’t, we always had Sea Foam Salad, another grandmother-era classic. But I’m a solid convert. I asked a few of my friends a while back what sides they have at Easter and they mentioned Ambrosia. I decided I needed to see what all the fuss was about. Then I ate half the bowl and skipped dinner that night.

I really never would have thought that mixing together some creamy stuff with fruit, coconut, nuts, and marshmallows (of all things) would get this kind of result, but I’m telling you, this stuff is delicious. It is the perfect quick side dish for Easter!

Mandarin Orange Ambrosia Salad

Yield: Serves 8-10

Recipe by The Food Charlatan

  • 1 8-ounce tub cool whip, regular or lite (thawed)
  • 1/4 cup milk
  • 1/2 cup sour cream
  • 1 (3.4 ounce) instant vanilla pudding mix* (goes in the salad as dry powder)
  • 1 cup sweetened shredded coconut
  • 1 cup chopped nuts (I used walnuts. Pecans are good too.)
  • 2 cups mini marshmallows
  • 2 (15-ounce) cans mandarin oranges, drained well
  • 8 ounce can crushed pineapple, slightly drained (reserve juice)
  • 14 ounce jar maraschino cherries, drained well

  1. In a large bowl, add cool whip, milk, sour cream, and pudding mix.
  2. Add the coconut, nuts, and marshmallows. Stir well.
  3. Add the mandarin oranges, crushed pineapple, and cherries. Gently fold in the fruit.
  4. Add some of the reserved pineapple juice if it seems thick. (This is just personal preference)
  5. Serve immediately. Or cover and chill until you are ready to serve. You can make it up to 24 hours in advance.

*I've heard pistachio pudding mix is delicious too!

Strawberry Cucumber Salad with Honey Balsamic Dressing

Strawberry Cucumber Salad with Honey Balsamic Dressing from The Food Charlatan

This 4 ingredient salad is a total show stopper! It’s simplicity lets the strawberries and cucumbers shine. The only other ingredients are balsamic vinegar and honey. It is an impressive and healthy side dish to bring for your Easter potluck! My mom and I were eating this salad together when she mused, “Cucumbers are one of […]

Strawberry Panzanella Salad

Strawberry Panzanella Salad from The Food Charlatan

This spring salad is mostly made up of strawberries and fried bread. FRIED BREAD. Oh, and fresh mozzarella to seal the deal. It’s easy to make ahead, so this makes a perfect side dish for Easter! Today I went down to my parent’s house in Manteca, and my mom and I sorted through some old boxes of […]

Pistachio-Pear Cucumber Salad

Pistachio-Pear Cucumber Salad |

A simple and refreshing cucumber salad, autumn-ified with pears, pistachios, blue cheese, and cranberries. An easy and healthy fall side dish…to combat all the football food.  My mom came over right as I was finishing up this salad. I plopped a bowl in front of her and she looked down and said, “What are these?” […]

Copycat Cafe Zupas Poppyseed Dressing and Spinach Bleu Cheese Salad

Copycat Cafe Zupas Poppyseed Dressing and Spinach Bleu Cheese Salad from

I’m not gonna lie, this poppyseed salad dressing tastes really good without the poppyseeds. I know, because I made it again yesterday, trying (in vain) to shake out the last 12 poppyseeds stuck to the bottom of my empty jar. But it still tastes amazing. I guess Poppyseed dressing sounds better than Mustardy Oil and […]

Grapefruit, Kale & Hearts of Palm Salad

Grapefruit, Kale & Hearts of Palm Salad from

I totally have a weak stomach when it comes to hearing about other people’s injuries. I love watching the Olympics–I am a HUGE sucker for ice dancing, no shame–but I seriously could do without the commentary detailing the torn ACLs and fractured spines. I just want to watch tiny doll-like women prance around in sequins. […]

Orange Olive Salad with Balsamic Vinaigrette

Orange Olive Salad with Balsamic Vinaigrette

I just made a reference to Eric about the part in the old Star Trek movie where they film the Enterpriser ship for like 11 minutes or something ridiculous like that. Instead of getting a high-five for even knowing about that, I get a scoff, “It’s the Enterprise, not the Enterpriser.” “So what, that’s just […]

Cilantro-Lime Cucumber Salad

Cilantro-Lime Cucumber Salad from

This easy cucumber salad is fast and fresh with a bit of a kick. The cilantro adds the perfect twist! Today I dusted off my piano and started playing a song. Eric immediately said, “Oh, man, that’s bad. We need to get that piano tuned.” It’s adorable that when he hears terribly wrong notes coming out […]

Eric handed me some scraps of paper that he had just gathered up from around the house. They were my daily to-do lists from the past week. Asian Marinated Cucumber Salad

Asian Marinated Cucumber Salad

Today I spent more money at the grocery store than I have ever spent in my life. I actually got the shakes when I was checking out and saw the number go up and up and up. Sweaty, tremble-y hands, discombobulated, everything. I’m like the antithesis of a shopaholic. It’s not that I can’t spend […]
