The other day Eric felt the back of his head and wondered what it would feel like to be bald. Then Kris (Eric’s mom) told us about her neighbor Sue. One time Sue had guests stay the night, people she didn’t know very well. A lady was sleeping on the couch, and in the middle of the night Sue’s cat licked the same spot on the lady’s head until ALL the hair came off in that spot. Can you imagine waking up to a bald spot on your head…and then realizing that a cat LICKED IT OFF??
I’m going to think of this story every time I think I’m having a bad day. “Well Karen, at least you didn’t wake up to a cat licking your hair off.” Count your blessings.
How is Christmas prep going? Are you ready for the big day? I’ve been done shopping for several days (shocker) but still have lots of wrapping to do. Someday I will get this all done ahead of time…but not this year. This year I’m too busy baking 5,000 cookies. Butter Pecans, Gingersnaps, Sour Cream Twists, Macaroons, Spritz…there is basically sugar bursting out of the kitchen.
But guess what!!! There is no sugar in this awesome hot chocolate. That’s right my friends, sugar-free hot chocolate that doesn’t suck. Honey ftw!
This recipe is from my sister-in-law Reesy, who likes to make this when she is craving something sweet but doesn’t want to pile on calories. It is rich and simple and satisfies your chocolate cravings (I know you.)
You can use any kind of milk you want. I used whole milk because that’s what I had, but Reesy likes to use almond milk with vanilla. Any kind of milk will do.
The secret to making this hot chocolate awesome? FROTH! Whipping it up and making it big and bubbly is what makes this hot chocolate so good, in spite of being low calorie. All you need is an immersion blender! You can blend it right in your mug if you are just serving yourself, or you can throw multiple batches in a saucepan if you are serving a crowd. Blending it whips air into the hot chocolate, making it taste really rich. The splash of vanilla adds just the perfect touch.
