Easy Honey Hot Chocolate for One

This all natural 4-ingredient sugar-free hot cocoa uses honey as a sweetener but doesn’t skimp on flavor. The secret is in the froth!!! Guys. It’s a game changer. All you need is an immersion blender.

The other day Eric felt the back of his head and wondered what it would feel like to be bald. Then Kris (Eric’s mom) told us about her neighbor Sue. One time Sue had guests stay the night, people she didn’t know very well. A lady was sleeping on the couch, and in the middle of the night Sue’s cat licked the same spot on the lady’s head until ALL the hair came off in that spot. Can you imagine waking up to a bald spot on your head…and then realizing that a cat LICKED IT OFF??

I’m going to think of this story every time I think I’m having a bad day. “Well Karen, at least you didn’t wake up to a cat licking your hair off.” Count your blessings.

How is Christmas prep going? Are you ready for the big day? I’ve been done shopping for several days (shocker) but still have lots of wrapping to do. Someday I will get this all done ahead of time…but not this year. This year I’m too busy baking 5,000 cookies. Butter Pecans, Gingersnaps, Sour Cream Twists, Macaroons, Spritz…there is basically sugar bursting out of the kitchen.

But guess what!!! There is no sugar in this awesome hot chocolate. That’s right my friends, sugar-free hot chocolate that doesn’t suck. Honey ftw!

This recipe is from my sister-in-law Reesy, who likes to make this when she is craving something sweet but doesn’t want to pile on calories. It is rich and simple and satisfies your chocolate cravings (I know you.)

You can use any kind of milk you want. I used whole milk because that’s what I had, but Reesy likes to use almond milk with vanilla. Any kind of milk will do.

The secret to making this hot chocolate awesome? FROTH! Whipping it up and making it big and bubbly is what makes this hot chocolate so good, in spite of being low calorie. All you need is an immersion blender! You can blend it right in your mug if you are just serving yourself, or you can throw multiple batches in a saucepan if you are serving a crowd. Blending it whips air into the hot chocolate, making it taste really rich. The splash of vanilla adds just the perfect touch.

Reesy is a graphic designer (who just won the Lilla Rogers Global Talent Award, by the way. She also designed my blog.) Reesy put together this amazing design and I took the photos. Isn’t it gorgeous?

And here’s out that same window. Is it snowing where you are? I’m glad I took this from inside!

Merry Christmas everyone!! I hope you get some time this week to spend with your families. I also hope you get a chance to remember our Savior, who gave so much for us and continues to light the way. I am so grateful for the peace he brings into my life.

I will be back next week with some easy New Years Eve appetizers! Merry Christmas!

Easy Honey Hot Chocolate For One

Yield: Serves 1

Recipe by my sister-in-law Reesy

Ingredients

  • 1 cup milk (any kind*)
  • 1 heaping tablespoon unsweetened cocoa
  • 1 heaping tablespoon honey
  • 1 teaspoon vanilla

Instructions

  1. Add 1 cup milk to a large mug. Heat in the microwave for 1-2 minutes, or until it's very hot.
  2. Add cocoa, honey, and vanilla.
  3. Use an immersion blender to mix everything together. Blend for 1-2 minutes until it is nice and frothy!
  4. It is really easy to double, triple, quadruple this recipe. Heat it in a saucepan until the milk is very hot, follow directions as usual.

Notes

*You can use any kind of milk you like: whole milk, skim milk, almond milk, soy milk, etc. Reesy likes to use the vanilla almond milk to save on calories (you don't need to add vanilla if you use vanilla-flavored milk).

Who could possibly sleep thru a cat licking your hair off!!! Agh- that is just horrid. The artwork and the chocolate are needed just to revive me from that mental image☕️❄️

Love the honey/chocolate combo. And the cat licking story! That’s crazy! And I’m in love with the hot cocoa photo your graphic designer friend set up. AMAZING! I will have to figure out something creative to do like that. It’s so beautiful! (p.s. I’m a graphic designer too.)

Finally, a simple hot chocolate recipe – I’m trying this tonite:) Cats, what could be better. One of my younger son’s friends obviously has something about his hair that one of our cats loves; she licks his hair every time he is over – I have no idea why, and didn’t even realize this was a phenomenon among some cats lol. She has not yet licked him any bald spots but now I’ll be watching more closely!

Haha! That is so funny!! Maybe hair has more taste (to cats) than we think?? Weird. Haha. And I just made this hot chocolate again this afternoon for this cold rainy day here. I love it. I hope it warms you up tonight!
